Agar-agar (or simply agar) is a polysaccharide made from various marine algae [SeIe] . It is used to make the jells in Petri dishes used to cultivate micro-organisms, and as a thickener and conditioner in foods.

Agar and Asian cuisine

Agar is a featured ingredient in Asian cuisine. It is used in jelly cups and molded foods, the consistency varying between soft custard and bouncy firmness.
