Xanthan gum: versatile food conditioner

Cultured from the bacteria 1  Xanthomonas campestris, xanthan gum is a polysaccharide used as a thickener and dough conditioner. Some strains of the bacteria cause serious plant diseases including citrus canker. A non-pathogenic strain of X. campestris is used for making gum.
